Zucchini Bread/Muffin

This recipe is easy, gluten free, dairy free and sugar free and it tastes like “the real thing”!

Ingredients:

  • 1 cup of a combination of gluten free flour (brown rice, 1/4 cup coconut, 1/4 cup chickpea, etc)

  • 1/2 cup almond flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 2 tsp cinnamon

  • 1/2 cup monk fruit granules

  • 2 eggs

  • 1/4 cup almond milk

  • 1/3 cup coconut oil

  • 2 tsp vanilla extract

  • 1 cup grated zucchini

  • 1 1/2 T grated lemon rind

  • 1 cup roasted nuts (pecans, walnuts, almonds)

  • 1/4 cup chopped dark chocolate or chocolate chips

Here’s How:

  1. Preheat oven to 350.

  2. Line a loaf pan with parchment paper or grease a muffin tin and set aside.

  3. Mix dry ingredients in one bowl, and wet ingredients in another.

  4. Mix together, adding zucchini and rest of ingredients last.

  5. Spoon into loaf pan or muffin tin and bake for about 20-30 minutes or until done.

  6. Cool and enjoy or store in fridge for several days.
