Avocado Corn Salad

Ingredients:

  • 1 fresh ear of corn, cut off the cob

  • 2 large avocados, cut into chunks

  • juice of a lime

  • 2 T finely chopped red onion

  • 1/2 of a red pepper, coarsely chopped

  • 2 T chopped parsley or cilantro

  • 1-2 cloves of garlic, pressed (optional)

  • salt and pepper to taste

Here’s How:

  1. Remove corn from cob and place in a large bowl.

  2. Add remaining ingredients and mix gently so the avocado doesn’t lose it’s cube form.

  3. Chill and serve.

This goes well with a green salad and grilled grass fed beef burgers.
