Cocoa Avocado Pudding

Avocados are rich in healthy fats and fiber and high in anti-oxidants, which are known to reduce the risk of chronic disease. Cocoa powder contains polyphenols and antioxidants that help improve cholesterol and blood sugar levels and reduce the risk of heart disease. Carob contains notable amounts of calcium, potassium and fiber and is naturally sweet. This recipe can be eaten anytime of day. It is nutritious and satisfying.

Ingredients:

  • 2 large ripe avocados

  • 4 T cocoa powder (can substitute 3-4 T carob powder)

  • 1/2 T cinnamon

  • 2 tsp vanilla

  • 3 T allulose or monk fruit

  • 1 T real maple syrup

  • a sprinkle of pink Himalayan salt

Here’s How:

  1. Use a food processor and blend the avocados.

  2. Add remaining ingredients and chill before eating.
