Gluten Free Crab Cakes

Crab cakes are a light, nutritious protein source with high levels of omega 3 fatty acids, B12 and selenium. It is also low in calories.

Ingredients:

  • 1 egg, beaten

  • 2 T dijon mustard

  • 2 tsp Worcestershire sauce

  • 1/2 tsp hot sauce

  • 1/3 cup avocado mayonnaise

  • salt and pepper to taste

  • 1 lb lump crabmeat

  • 3/4 cups ground roasted nuts (walnuts, almonds, pecans)

  • 2 T fresh parsley

  • 1 finely chopped green onion

  • Avocado oil for sauteeing

  • lemon wedges for serving

  • Aioli sauce (optional) for serving

Here’s How:

  1. Whisk together egg and all ingredients listed before the crab meat and set aside.

  2. In another bowl mix crabmeat, crushed nuts and parsley and green onion. Then mix 2 mixtures together and form patties (approximately 8-10 depending upon the size)

  3. Heat a large skillet over medium-high heat, add oil and when hot, add crab cakes and cook in batches until crispy and golden, 3-5 minutes each side.

  4. Serve with lemon and aioli.
