Green Chicken Salad
This recipe is a great way to use leftover chicken and add lots of greens to enhance the nutritional value. You can use a variety of greens and if you don’t have apples, you can leave it out or substitute pear, dried apricot or even puffed chopped strawberries. Have fun with it!
Ingredients:
2-3 cups chopped cooked chicken
2-3 stalks of celery, chopped fine
1-1 1/2 cups chopped laminate kale
1/2 cup chopped Italian parsley
1 cup chopped apple
3-4 T lemon preserved salad dressing
Salt and pepper to taste
sprinkle with other herbs and spices of your choice (garlic granules, onion salt, umami, red pepper, paprika)

Chop all ingredients, mix together.
Add dressing and seasonings to taste.
Chill and serve.
