Raw Nutty Bars

Ingredients:

  • 1/3 cup roasted sunflower seeds

  • 1/3 cup roasted pumpkin seeds

  • 1/3 cup roasted walnuts

  • 1/3 cup roasted pecans

  • 4-5 small pitted dates (soaked in hot water for 15 min) and save the water

  • 1/2 cup almond flour (or sub GF rolled oats)

  • 1/4 cup plant protein powder or sub GF rolled oats

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 cup coconut flakes

  • 1/2 cup freeze dried strawberries or raspberries

  • 1/4 cup date soaking water (or less)

Here’s How:

  1. Place roasted seeds and nuts in a food processor and pulse.

  2. Add dates and pulse.

  3. Add ingredients up to water and pulse.

  4. Press the mixture with your fingers and determine if it will hold together. Perhaps, add part of the soaking water and when it feels ready, press into a small loaf pan lined with parchment paper.

  5. Chill in freezer a few hours.

  6. Cut and eat straight from the freezer.

  7. Store in fridge or freezer depending upon how you like it.
