Chocolate Chunks

Ingredients:

  • 7 oz 85% chocolate* (organic preferable)

  • 3 T coconut cream concentrate*

  • 1 T coconut oil (optional)

  • 5 drops of liquid stevia (optional)

  • 1 tsp vanilla  or almond extract (optional)

  • 1/2 cup toasted chopped almonds (or walnuts or pecans)

  • 1/2 cup chopped freeze dried puffed raspberries or dried cherries or other chopped dried fruit of your choice (optional)

  1. Use a double boiler to melt the first 3 ingredients.

  2. When melted add rest of ingredients.

  3. Pour into little rubber molds or greased mini muffin tins.

  4. Chill in refrigerator until solid.

  5. Remove from molds and store in airtight container in the fridge. Best served chilled.

These satisfying chocolate chunks are a thrifty way to provide dessert for guests - or satisfy a chocolate craving. I love to make little platters of these with dried fruits and nuts for a light and yummy dessert.*Note:

  • Trader Joe's sells an 85% dark chocolate lovers chocolate bar at a great price.

  • Tropical Traditions is the best coconut cream concentrate I've found - it comes in a glass jar. Do *not* substitute canned coconut cream - it won't work. Coconut cream concentrate is what you want - it's a bit higher priced, but a little bit goes a long way. Also, coconut oil is different from both - and also needed for this recipe.
