Vegan Chocolate Chip Cookie Bars

A tasty treat for those interested in avoiding eggs and flour.

Ingredients:

  • 1 T Flax seeds, ground

  • 2 T coconut flour

  • 2/3 cup granulated sweetener of your choice (organic sugar, sucanat, coconut sugar)

  • 1/2 cup almond butter (or peanut butter)

  • 4 T coconut milk (or almond or oat milk)

  • 1/8 tsp almond extract

  • 1/2 cup dark chocolate chips

Here’s How:

  1. Preheat oven to 350.

  2. Place ground flax in a small bow with 2 1/2 T water and let sit for 15 minutes to gel.

  3. Place a piece of parchment paper in an 8/8 baking dish.

  4. In a mixing bowl, combine flours and sweetener.

  5. In another bowl, combine flax “egg”, nut butter, extract and milk.

  6. Mix wet and dry until combined (mixture will seem dry) and add chocolate chips.

  7. Use a rubber spatula to place batter into parchment paper lined dish and spread.

  8. Bake 20-25 minutes.

  9. Allow bars to cool. Cut into desired portions and enjoy!
