Granola, Brittle Style

Ingredients:

  • 1 cup chopped Brazil nuts

  • 1/2 cup chopped pecans

  • 1/2 cup pumpkin seeds

  • 1/3 cup coconut flakes (optional)

  • 1/3 cup raw buckwheat groats (optional)

  • 2 large organic egg whites

  • 3 T nut butter (almond, organic peanut butter, cashew, etc.)

  • 1/3 cup real maple syrup (or monk fruit syrup)

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt (I like pink and gray salt for the minerals)

Here’s How:

  1. Preheat oven to 275.

  2. Cover a cookie sheet with parchment paper.

  3. Mix nuts, groats, coconut and spices in a bowl and set aside.

  4. In another small bowl, whisk egg whites till frothy. Add nut butter, sweetener and vanilla extract and blend.

  5. Pour over nuts and transfer mixture to cookie sheet, spreading evenly but keeping nuts somewhat connected.

  6. Bake 45 minutes, cool and flip parchment to bake on the other side for another 30 minutes.

  7. Let cool and break up into chunks of your choosing.

  8. Enjoy as a breakfast with yoghurt, eat as a snack or topping for a dessert. Store in an airtight container.
