My Husband's Favorite Mayonnaise

Ingredients:

  • 1 1/4 cup extra virgin olive oil or avocado oil

  • 1 organic egg

  • 1 1/2 T apple cider vinegar

  • 1 large clove garlic, minced

  • 1 T dijon mustard

  • 1/2 tsp sea salt

  • 1 pinch paprika (optional)

Here’s How:

  1. Combine all ingredients except 1 1/4 cup olive oil in a glass jar and let sit to room temperature. (1-2 hours)

  2. Use an immersion blender and mix. You can also use a regular blender.

  3. Add only 1 T of oil at a time until well blended and eventually all the oil is added.

  4. Cover and refrigerate until use.

  5. Yum!
